- 4 large flour tortillas

Instructions
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until the onion is translucent.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the black beans, corn, chili powder, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.
- Warm the flour tortillas in a dry skillet or microwave until pliable.
- To assemble, place a generous scoop of the beef mixture in the center of each tortilla. Top with shredded cheddar cheese and a spoonful of salsa.
- Fold in the sides of the tortilla and roll it up tightly from the bottom to the top.
- Serve with a dollop of sour cream and garnish with fresh cilantro.
