Description

A delicious and flavorful Ground Beef Burrito recipe that combines seasoned ground beef, black beans, corn, and fresh toppings wrapped in a soft tortilla.

Ingredients

Scale
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1/2 cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until the onion is translucent.
  2. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the black beans, corn, chili powder, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.
  4. Warm the flour tortillas in a dry skillet or microwave until pliable.
  5. To assemble, place a generous scoop of the beef mixture in the center of each tortilla. Top with shredded cheddar cheese and a spoonful of salsa.
  6. Fold in the sides of the tortilla and roll it up tightly from the bottom to the top.
  7. Serve with a dollop of sour cream and garnish with fresh cilantro.
