- 450 g lean ground beef (93% lean)
- 2 medium sweet potatoes, peeled and diced
- 1 yellow onion, diced
- 1 avocado, sliced
- 240 g cottage cheese (low-fat or full-fat)
- 30 ml olive oil
- 1 taco seasoning packet (or 30 ml homemade)
- 2 tbsp (30 ml) hot honey
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp ground cinnamon
- Salt and black pepper, to taste
Instructions
- Preheat oven to 200°C. Toss diced sweet potatoes with 15 ml olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread evenly on a baking sheet and roast for 40 to 45 minutes, stirring once halfway through.
- Heat remaining 15 ml olive oil in a skillet over medium heat. Add diced onion and sauté until softened. Add ground beef and taco seasoning, cook until beef is browned and cooked through.
- Divide roasted sweet potatoes among four serving bowls. Top with cooked ground beef, sliced avocado, and cottage cheese.
- Drizzle each bowl with hot honey. Optionally garnish with chopped cilantro, red pepper flakes, or a lime wedge.
Notes
- For a spicier kick, add more hot honey or include diced jalapeños.
- Customize toppings with your favorite ingredients like diced tomatoes or shredded cheese.
