Description

A flavorful and satisfying Ground Beef Hot Honey Bowl featuring roasted sweet potatoes, seasoned ground beef, and creamy cottage cheese, drizzled with hot honey.


Ingredients

  • 450 g lean ground beef (93% lean)
  • 2 medium sweet potatoes, peeled and diced
  • 1 yellow onion, diced
  • 1 avocado, sliced
  • 240 g cottage cheese (low-fat or full-fat)
  • 30 ml olive oil
  • 1 taco seasoning packet (or 30 ml homemade)
  • 2 tbsp (30 ml) hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp ground cinnamon
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 200°C. Toss diced sweet potatoes with 15 ml olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread evenly on a baking sheet and roast for 40 to 45 minutes, stirring once halfway through.
  2. Heat remaining 15 ml olive oil in a skillet over medium heat. Add diced onion and sauté until softened. Add ground beef and taco seasoning, cook until beef is browned and cooked through.
  3. Divide roasted sweet potatoes among four serving bowls. Top with cooked ground beef, sliced avocado, and cottage cheese.
  4. Drizzle each bowl with hot honey. Optionally garnish with chopped cilantro, red pepper flakes, or a lime wedge.

Notes

  • For a spicier kick, add more hot honey or include diced jalapeños.
