  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth
  • 1 tablespoon fresh parsley

Instructions

  1. Preheat a large skillet over medium heat.
  2. Peel and dice the sweet potatoes into small cubes.
  3. Chop the onion and finely mince the garlic.
  4. Add olive oil to the skillet and brown the ground beef, breaking it up with a spoon.
  5. Once the beef is cooked through, remove it from the skillet and set it aside.

  9. Pour in beef broth and return the cooked ground beef to the skillet, mixing everything well.
  10. Cover the skillet with a lid and let the ingredients simmer for about 10-15 minutes until the sweet potatoes are tender.
  11. Check the seasoning and adjust if needed.
  12. Garnish the skillet with freshly chopped parsley before serving.
