Description

A quick and healthy Ground Turkey Egg Roll Bowl that’s packed with flavor and easy to prepare.


Ingredients

  • 1 pound ground turkey
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 4 cups coleslaw mix (cabbage and carrots)
  • 1/2 cup green onions, sliced
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Sesame seeds for garnish
  • Sriracha or hot sauce (optional)

Instructions

  1. In a large skillet, heat the sesame oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Stir in the minced ginger and garlic, cooking for an additional 1-2 minutes until fragrant.
  3. Add the coleslaw mix to the skillet and stir to combine. Cook for about 3-4 minutes, or until the vegetables are tender but still crisp.
  4. Pour in the soy sauce and season with salt and pepper. Mix well and let it cook for another 2 minutes.
  5. Push the turkey and vegetable mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked, then mix everything together.
  6. Remove from heat and garnish with sliced green onions and sesame seeds. Serve hot, with Sriracha or hot sauce on the side if desired.
