A quick and healthy Ground Turkey Egg Roll Bowl that’s packed with flavor and easy to prepare.
Ingredients

- 1 pound ground turkey
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, minced
- 2 cloves garlic, minced
- 4 cups coleslaw mix (cabbage and carrots)
- 1/2 cup green onions, sliced
- 2 eggs, beaten
- Salt and pepper to taste
- Sesame seeds for garnish
- Sriracha or hot sauce (optional)
Instructions
- In a large skillet, heat the sesame oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in the minced ginger and garlic, cooking for an additional 1-2 minutes until fragrant.
- Add the coleslaw mix to the skillet and stir to combine. Cook for about 3-4 minutes, or until the vegetables are tender but still crisp.
- Pour in the soy sauce and season with salt and pepper. Mix well and let it cook for another 2 minutes.
- Push the turkey and vegetable mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked, then mix everything together.
- Remove from heat and garnish with sliced green onions and sesame seeds. Serve hot, with Sriracha or hot sauce on the side if desired.
