Delicious Ground Turkey Rice Bowls topped with a spicy Bang Bang sauce.

- 1 pound ground turkey
- 1 cup jasmine rice
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup bell peppers, diced
- 1 cup broccoli florets
- Salt and pepper to taste
- 1/4 cup green onions, sliced (for garnish)
- For the Bang Bang Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 teaspoon lime juice
Instructions
- Begin by cooking the jasmine rice. Rinse the rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and water, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- While the rice is cooking, prepare the Bang Bang sauce. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until the onion is translucent.
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for 5-7 minutes, or until the turkey is browned and cooked through. Season with salt and pepper.
- Add the diced bell peppers and broccoli florets to the skillet, cooking for an additional 5 minutes until the vegetables are tender but still crisp.
- To assemble the bowls, divide the cooked rice among serving bowls. Top with the ground turkey and vegetable mixture, then drizzle generously with the Bang Bang sauce. Garnish with sliced green onions.

- Adjust the level of sriracha in the Bang Bang sauce according to your spice preference.
