Description
A quick and easy skillet recipe featuring ground turkey, zucchini, and chickpeas, topped with melted mozzarella cheese.

- 2 Tbsp olive oil – or vegetable oil
- 1 lb ground turkey
- 1 cup chopped onion
- 3 garlic cloves – minced
- 1 ½ cups chopped zucchini – about 1 medium zucchini
- 1 cup chickpeas – drained and rinsed
- 1 cup canned diced tomatoes – with juices
- ¾ cup peas – canned or frozen
- ¼ cup tomato paste
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp chili powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp ground black pepper
- 1 cup shredded mozzarella cheese
Instructions
- Cook the 1 lb ground turkey with 1 Tbsp olive oil over medium-high heat, breaking it apart as you go.
- Move the ground turkey to the side and add 1 Tbsp olive oil, 3 minced garlic cloves and 1 cup chopped onion. Cook until onion turns translucent, about 1-2 minutes. Stir everything together.
- Add in 1 ½ cups chopped zucchini, 1 cup chickpeas, 1 cup diced tomatoes (with juice), ¾ cup peas, ¼ cup tomato paste and all spices (1 tsp onion powder, 1 tsp garlic powder, ½ tsp chili powder, ½ tsp paprika, ½ tsp salt and ¼ tsp ground black pepper).
- Mix everything together and cook on low for 2-4 minutes, or until zucchini is crisp tender when poked with a fork.
- Remove from heat and sprinkle 1 cup shredded mozzarella cheese on top. Cover with a lid or a plate for 1-2 minutes to help the cheese melt. Dish onto plates and enjoy!
Notes
- Feel free to use fresh or frozen peas.
- Can substitute ground turkey with ground chicken or beef.
- Add additional vegetables like bell peppers or carrots for more flavor.
