Guy Fieri’s Macaroni Salad is a refreshing and hearty side dish perfect for picnics and gatherings.
Ingredients

- 1 lb elbow macaroni or small pasta shells
- 1 cup carrots, shredded or finely chopped
- 1 cup celery, finely chopped
- 1 small red bell pepper, finely diced
- 1/2 cup red onion, finely diced
- 1/2 cup sweet pickle relish
- 1 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp Dijon mustard
- 2 tbsp apple cider vinegar (optional)
- 1 tsp granulated sugar (optional)
- 1/2 tsp paprika (optional)
- 1/2 tsp garlic powder (optional)
- 1/2 tsp onion powder (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Gather and measure all ingredients (5 minutes).
- Bring a large pot of salted water to a boil and cook macaroni until al dente (10 minutes). Drain and rinse under cold water.
- Finely chop celery, red bell pepper, and red onion; shred or finely dice carrots. Add to the bowl with pasta.
- In a medium bowl, whisk mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, paprika, garlic powder, and onion powder. Season with salt and pepper.
- Pour dressing over pasta and toss to combine. Cover and refrigerate for at least 1-2 hours.
- Before serving, give a final toss and garnish with parsley. Serve chilled.
