Description

A delicious breakfast treat combining savory ham and cheddar cheese in flaky biscuits.


Ingredients

Scale
  • 2 cups all-purpose flour, plus more for dusting
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small cubes
  • 3/4 cup cold buttermilk
  • 4 ounces cooked ham, diced
  • 4 ounces cheddar cheese, shredded
  • 2 tablespoons melted butter, for brushing
  • Optional: 1 tablespoon chopped fresh chives or parsley, for garnish

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. Add the cold butter to the flour mixture. Using a pastry blender or fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.
  3. Gradually pour in the cold buttermilk, stirring gently with a fork until just combined. Be careful not to overmix the dough.
  4. Gently fold in the diced ham and shredded cheddar cheese until evenly distributed.
  5. Lightly flour a clean work surface. Turn the dough out onto the floured surface. Gently pat the dough into a 1-inch thick rectangle. Knead the dough very lightly – only about 3-4 times – just enough to bring it together.
  6. Using a 2-inch biscuit cutter (or a sharp knife), cut out the biscuits. Press straight down and avoid twisting the cutter. Re-roll the scraps of dough to cut out more biscuits.
  7. Place the biscuits onto an ungreased baking sheet, spacing them about 1 inch apart.
  8. Brush the tops of the biscuits with the melted butter.
  9. Bake in a preheated oven at 425°F (220°C) for 15-20 minutes, or until the biscuits are golden brown and cooked through.
  10. Remove the biscuits from the oven and let them cool on the baking sheet for a few minutes before serving. Garnish with chopped fresh chives or parsley, if desired.

Notes

  • Make sure the butter is cold for best flakiness in the biscuits.
  • Don’t overmix the dough to keep the biscuits tender.
  • Store any leftovers in an airtight container at room temperature.
