Ingredients

  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 (20 oz) can crushed pineapple with juice
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened shredded coconut (optional)
  • For the Frosting:
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed pineapple (drained)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. Add the eggs, crushed pineapple (with juice), and vanilla extract. Mix until just combined.
  4. Fold in the shredded coconut, if using. Pour the batter into the prepared baking pan.
  5. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cake cool completely in the pan.
  6. For the frosting, beat together the cream cheese and butter until smooth and creamy.
  7. Gradually add in the powdered sugar, vanilla extract, and crushed pineapple. Mix until fully incorporated.
  8. Once the cake has cooled, spread the frosting evenly over the top.
  9. Refrigerate the cake for at least 30 minutes before serving for best results.
