Instructions
- In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk until thickened.
- Stir in the vanilla extract until smooth.
- Fold in the well-drained crushed pineapple and shredded coconut until evenly combined.
- Gently fold in the whipped topping until the mixture is light and fluffy.
- Add the mini marshmallows and macadamia nuts, if using, and mix gently.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld.
