Ingredients

  • 2 large sweet potatoes, cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 cups spinach leaves
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss sweet potatoes with olive oil, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet.
  4. Roast for 25-30 minutes until tender and golden.
  5. In a large bowl, combine roasted sweet potatoes, cherry tomatoes, red onion, feta cheese, and parsley.
  6. Add spinach leaves and toss gently.
