Description

Herbed Cottage Cheese Biscuits are a delightful treat, perfect for serving warm with butter or as a side with soups and stews.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup cottage cheese (small curd)
  • 1/3 cup cold butter, cubed
  • 1/2 cup buttermilk
  • 1 tablespoon fresh chives, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon garlic powder
  • 2 tablespoons melted butter for brushing

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  3. Add cold butter cubes and cut into flour mixture using a pastry cutter or your fingertips until mixture resembles coarse crumbs.
  4. Stir in cottage cheese, herbs, and garlic powder.
  5. Gradually add buttermilk and stir until dough just comes together. Do not overmix.
  6. Turn dough onto a floured surface and gently pat to 1-inch thickness.
  7. Cut with a 2-inch round biscuit cutter or glass. Place biscuits on prepared baking sheet about 1 inch apart.
  8. Brush tops with melted butter.
  9. Bake for 15-18 minutes until golden brown.
  10. Serve warm from the oven.
