- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup cottage cheese (small curd)
- 1/3 cup cold butter, cubed
- 1/2 cup buttermilk
- 1 tablespoon fresh chives, finely chopped
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon garlic powder
- 2 tablespoons melted butter for brushing
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
- Add cold butter cubes and cut into flour mixture using a pastry cutter or your fingertips until mixture resembles coarse crumbs.
- Stir in cottage cheese, herbs, and garlic powder.
- Gradually add buttermilk and stir until dough just comes together. Do not overmix.
- Turn dough onto a floured surface and gently pat to 1-inch thickness.
- Cut with a 2-inch round biscuit cutter or glass. Place biscuits on prepared baking sheet about 1 inch apart.
- Brush tops with melted butter.
- Bake for 15-18 minutes until golden brown.
- Serve warm from the oven.
