A flavorful and nutritious bowl packed with high protein ingredients, perfect for a satisfying meal.


Ingredients

  • 8 oz Flank steak
  • 1 Bell pepper, medium
  • 1/4 cup Black beans
  • 1 tbsp Cilantro, fresh
  • 1/4 cup Corn, kernels
  • 1 tsp Garlic powder
  • 1 Onion, medium
  • 1/2 tsp Onion powder
  • 1 tbsp Lime juice
  • 1/2 cup Brown rice, cooked
  • 1/2 tsp Black pepper
  • 1 tsp Chili powder
  • 1 tsp Paprika, smoked
  • 1/2 tsp Salt
  • 1 tbsp Olive oil
  • 1 tsp Cumin
  • 1/4 cup Greek yogurt

Instructions

  1. Marinate the flank steak with lime juice, garlic powder, onion powder, black pepper, chili powder, paprika, cumin, and salt for at least 30 minutes.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add the marinated flank steak and cook for about 5-7 minutes on each side until desired doneness.
  4. Remove the steak from the skillet and let it rest for a few minutes before slicing thinly.
  5. In the same skillet, add chopped onion and bell pepper. Sauté until softened, about 3-5 minutes.
  6. In a serving bowl, layer the cooked brown rice, sautéed vegetables, black beans, corn, and sliced steak.
  7. Top with fresh cilantro and a dollop of Greek yogurt before serving.
