- 2 (¼-ounce) packages instant yeast (or 4½ teaspoons)
- ⅓ cup warm water (105-115°F)
- 1½ cups milk (whole or low fat)
- ½ cup granulated sugar
- 1 teaspoon salt
- 2 large eggs
- ⅓ cup butter (or shortening), softened
- 5 cups all-purpose flour
- Canola oil, for frying
- ½ cup butter, melted (for glaze)
- 2 cups powdered sugar (for glaze)
- 2 teaspoons vanilla extract (for glaze)
- 5–7 tablespoons evaporated milk (for glaze)
Instructions
- Dissolve the yeast in the warm water in a small bowl and let sit for 5 minutes until foamy.
- In a large bowl, combine yeast mixture, milk, sugar, salt, eggs, and softened butter. Mix until well incorporated.
- Gradually add flour, one cup at a time, mixing until the dough is soft and slightly sticky.
- Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1-1½ hours until doubled in size.
- Roll out the risen dough to ½-inch thickness on a floured surface. Cut doughnut shapes using a doughnut cutter or two round cutters.
- Place cut doughnuts on a baking sheet, cover, and let rise for 30-45 minutes until puffy.
- Heat 2 inches of canola oil in a large pot or skillet to 350°F.
- Fry doughnuts in batches, cooking each side for 1-2 minutes until golden brown. Drain on paper towels.
- For the glaze, whisk melted butter, powdered sugar, vanilla, and evaporated milk until smooth.
- Dip warm doughnuts into the glaze to coat fully and let set before serving.
Notes
- Ensure the water is at the right temperature for the yeast to activate.
- Do not overcrowd the pot when frying to maintain the oil temperature.
- Store any leftover doughnuts in an airtight container for freshness.
