Description

Homemade Sourdough Runzas are a delicious savory pastry filled with seasoned beef, cabbage, and cheese, all wrapped in a fluffy sourdough dough.


Ingredients

  • 2 cups sourdough starter
  • 4 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • 1 pound ground beef
  • 1 small head cabbage, finely chopped
  • 1 onion, diced
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 egg (for egg wash)

Instructions

  1. Prepare the Dough: In a large bowl, combine sourdough starter, flour, sugar, salt, melted butter, and milk. Mix until a cohesive dough forms. Knead for about 10 minutes on a floured surface until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let rise for 1-2 hours until doubled in size.
  2. Cook the Filling: Heat a skillet over medium heat and brown the ground beef, draining excess fat. Add chopped cabbage and diced onions, cooking until wilted. Season with salt and pepper.
  3. Roll Out the Dough: Preheat oven to 375°F (190°C). Roll out the risen dough until about 1/4 inch thick. Cut into 4×4 inch squares.
  4. Assemble the Runzas: Place a generous spoonful of filling and cheese in the center of each square. Fold dough over filling and seal edges tightly.
  5. Bake the Runzas: Arrange on a baking sheet, brush tops with beaten egg. Bake for 25-30 minutes until golden brown and fragrant.
