Homemade Sourdough Runzas are a delicious savory pastry filled with seasoned beef, cabbage, and cheese, all wrapped in a fluffy sourdough dough.

- 2 cups sourdough starter
- 4 cups all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/4 cup butter, melted
- 1/2 cup milk
- 1 pound ground beef
- 1 small head cabbage, finely chopped
- 1 onion, diced
- 2 cups shredded cheese (cheddar or your choice)
- 1 egg (for egg wash)
Instructions
- Prepare the Dough: In a large bowl, combine sourdough starter, flour, sugar, salt, melted butter, and milk. Mix until a cohesive dough forms. Knead for about 10 minutes on a floured surface until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let rise for 1-2 hours until doubled in size.
- Cook the Filling: Heat a skillet over medium heat and brown the ground beef, draining excess fat. Add chopped cabbage and diced onions, cooking until wilted. Season with salt and pepper.
- Roll Out the Dough: Preheat oven to 375°F (190°C). Roll out the risen dough until about 1/4 inch thick. Cut into 4×4 inch squares.
- Assemble the Runzas: Place a generous spoonful of filling and cheese in the center of each square. Fold dough over filling and seal edges tightly.
- Bake the Runzas: Arrange on a baking sheet, brush tops with beaten egg. Bake for 25-30 minutes until golden brown and fragrant.
Notes
- Feel free to customize the filling by adding spices or additional vegetables based on your preference.
- These can be frozen before baking; just add a few extra minutes to the baking time if baking from frozen.
