- 1 whole chicken (1.8–2 kg / 4–5 lbs)
- 4 tbsp softened butter
- 3 tbsp honey
- 1 tbsp minced garlic
- Juice + zest of 1 lemon
- Salt & black pepper to taste
- 2 carrots, chopped
- 2 potatoes, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Mix butter, honey, garlic, lemon juice, and zest. Rub all over the chicken.
- Place vegetables in a baking pan and set the chicken on top.
- Roast for 60–75 minutes until golden.
- Rest for 10 minutes before slicing.
Notes
- Ensure the chicken reaches an internal temperature of 165°F (74°C) for safe consumption.
- Letting the chicken rest helps retain its juices.
- Feel free to add other vegetables like onions or bell peppers for extra flavor.
