Description

A unique and delicious bake combining cornbread and pasta with a savory meat sauce.


Ingredients

  • 1 box Jiffy cornbread mix
  • 1/3 cup honey
  • 1/2 cup milk
  • 1 egg
  • 8 oz pasta (penne or elbow)
  • 1 tablespoon olive oil
  • 1 lb ground beef or turkey
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup marinara or pasta sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Cook pasta according to package instructions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic; sauté until translucent.
  4. Add ground beef or turkey and cook until browned. Drain excess fat.
  5. Add diced tomatoes and marinara sauce to the meat mixture. Season with salt and pepper. Simmer for 5-10 minutes.
  6. Stir in the cooked pasta and mix well. Pour mixture into the prepared baking dish.
  7. In a separate bowl, mix Jiffy cornbread mix, honey, milk, and egg until well combined.
  8. Pour cornbread batter evenly over the pasta mixture in the baking dish.
  9. Top with shredded cheddar and mozzarella cheese.
  10. Bake for 25-30 minutes, or until cornbread is golden and cooked through.
  11. Let cool for a few minutes before serving. Garnish with green onions or parsley if desired.
