- 2 large eggs
- 1 tablespoon water

- 1/2 cup grated Parmesan cheese
- 1/2 cup hot honey (store-bought or homemade)
- 1/4 cup vegetable oil (or enough for shallow frying)
- Optional: fresh parsley, chopped for garnish

Instructions
- Prepare the chicken breast cutlets by pounding them to an even thickness if necessary.
- In a shallow dish, combine the flour, salt, and black pepper, mixing well.
- In another shallow dish, whisk the eggs with the tablespoon of water until smooth.
- In a third shallow dish, combine the breadcrumbs with the grated Parmesan cheese.
- Dredge each chicken cutlet in the flour mixture, ensuring full coating, then shake off excess flour.
- Dip the floured cutlet into the beaten eggs, making sure it is fully covered.
- Press the cutlet into the breadcrumb mixture, coating both sides evenly. Set aside on a plate and repeat with remaining cutlets.
- Heat the vegetable oil in a large skillet over medium-high heat until shimmering.
- Add the chicken cutlets to the skillet, cooking in batches to avoid overcrowding. Fry each side for about 3-4 minutes, or until golden brown and cooked through.
- Remove the cooked cutlets and place them on a paper towel-lined plate to drain excess oil.
- While warm, drizzle the cutlets generously with hot honey.
- Garnish with fresh parsley if desired and serve immediately with lemon wedges on the side.
