Instructions

- Make the raspberry puree: Blend half of the raspberries until smooth, then strain to remove seeds.
- Whip the cream: In a bowl, whip heavy cream until soft peaks form. Gradually add sugar and vanilla, then continue whipping until stiff peaks form.
- Dissolve gelatin: Mix gelatin with warm water according to package instructions and let cool slightly.
- Combine: Gently fold the raspberry puree into the whipped cream mixture until well blended.
- Chill: Spoon mousse into serving dishes and refrigerate for at least 1 hour before serving. Garnish with remaining raspberries.
