A rich and decadent raspberry chocolate mousse cake that combines the luscious flavors of chocolate and fresh raspberries.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup whole milk
  • 1 cup fresh raspberries
  • 1 cup dark chocolate chips
  • 1 tsp agar-agar powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, sugar, and baking powder.
  3. In a separate bowl, mix eggs, vegetable oil, and milk until frothy. Combine with dry ingredients until just mixed.
  4. Divide the batter between pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
  5. Melt dark chocolate chips; mix with fresh raspberries heated with agar-agar until dissolved to create mousse.
  6. Assemble by layering one cake with half the mousse, topping with the second layer, then spreading remaining mousse on top.
