A delicious and easy recipe for making traditional Irish Potato Bread.

- 2 cups mashed potatoes (about 2 large potatoes)
- 1 cup all-purpose flour (plus extra for dusting)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon unsalted butter, softened
- 1/4 cup milk (or more if needed)
- Optional: chopped chives or scallions for added flavor
Instructions
- Start by peeling the potatoes and cutting them into chunks. Place them in a pot of boiling salted water and cook until tender, about 15-20 minutes. Drain and let them cool slightly before mashing until smooth.
- In a mixing bowl, combine the 2 cups of mashed potatoes with 1 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
- Add the softened butter and mix until crumbly. Gradually add the milk, stirring until a soft dough forms. You may need to adjust the milk quantity slightly for the right consistency.
- If you’re using chives or scallions, fold them into the dough at this point for extra flavor.
- Lightly flour a clean surface and turn the dough out onto it. Gently knead the dough for about 1-2 minutes until it comes together smoothly and is not overly sticky.
- Shape the dough into a round disk about 1/2 inch thick. Use a knife to score a cross on the top to help it cook evenly.
- Preheat a skillet or griddle over medium heat and lightly grease it with butter or oil. Once hot, place the dough in the skillet.
- Cook for about 5-7 minutes on each side, or until it’s golden brown and cooked through. You may need to adjust the heat to prevent burning.
- Once cooked, transfer the potato bread to a cooling rack. Allow it to cool slightly before slicing.
Notes
- Make sure the mashed potatoes are smooth for the best texture.
- If the dough is too sticky, add a little more flour.
- Serve warm with butter or as a side dish with your favorite meal.
