Description

A delicious and easy recipe for making traditional Irish Potato Bread.


Ingredients

  • 2 cups mashed potatoes (about 2 large potatoes)
  • 1 cup all-purpose flour (plus extra for dusting)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon unsalted butter, softened
  • 1/4 cup milk (or more if needed)
  • Optional: chopped chives or scallions for added flavor

Instructions

  1. Start by peeling the potatoes and cutting them into chunks. Place them in a pot of boiling salted water and cook until tender, about 15-20 minutes. Drain and let them cool slightly before mashing until smooth.
  2. In a mixing bowl, combine the 2 cups of mashed potatoes with 1 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
  3. Add the softened butter and mix until crumbly. Gradually add the milk, stirring until a soft dough forms. You may need to adjust the milk quantity slightly for the right consistency.
  4. If you’re using chives or scallions, fold them into the dough at this point for extra flavor.
  5. Lightly flour a clean surface and turn the dough out onto it. Gently knead the dough for about 1-2 minutes until it comes together smoothly and is not overly sticky.
  6. Shape the dough into a round disk about 1/2 inch thick. Use a knife to score a cross on the top to help it cook evenly.
  7. Preheat a skillet or griddle over medium heat and lightly grease it with butter or oil. Once hot, place the dough in the skillet.
  8. Cook for about 5-7 minutes on each side, or until it’s golden brown and cooked through. You may need to adjust the heat to prevent burning.
  9. Once cooked, transfer the potato bread to a cooling rack. Allow it to cool slightly before slicing.

Notes

  • Make sure the mashed potatoes are smooth for the best texture.
  • If the dough is too sticky, add a little more flour.
  • Serve warm with butter or as a side dish with your favorite meal.
