Description
A creamy and delicious Irish potato pie, featuring mashed potatoes combined with cheese and herbs, all baked in a pie crust.

- 4 large potatoes (like Russets), peeled and cubed
- 1 cup heavy cream
- 4 tablespoons unsalted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 cup shredded sharp cheddar cheese
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh chives, chopped
- 1 pre-made pie crust (store-bought or homemade)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot of salted water, boil the cubed potatoes for about 15-20 minutes, or until fork-tender. Drain and set aside.
- In the same pot, return the drained potatoes and add the heavy cream, butter, salt, black pepper, and nutmeg. Mash until smooth and creamy. Set aside to cool slightly.
- In a skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Add the minced garlic and cook for another minute until fragrant.
- Stir the sautéed onions and garlic into the mashed potato mixture. Add half of the shredded cheddar cheese and the chopped chives, mixing until everything is well combined.
- Pour the potato mixture into the pie crust, spreading it evenly. Top with the remaining cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and the cheese is bubbly.
- Remove from the oven and let it cool for about 10 minutes before slicing.
