Description

A refreshing twist on a classic pasta salad featuring a variety of Italian meats, cheeses, and vegetables.


Ingredients

  • 16 oz rotini pasta, cooked and cooled
  • 1/2 cup sliced pepperoni
  • 1/2 cup chopped salami
  • 1/2 cup chopped ham
  • 1 cup shredded iceberg lettuce
  • 1/2 cup sliced red onions
  • 1/2 cup sliced banana peppers
  • 1/2 cup sliced black olives
  • 1/2 cup chopped tomatoes
  • 1/2 cup shredded provolone cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 cup mayonnaise
  • 2 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste

Instructions

  1. Cook rotini pasta according to package instructions. Drain and let cool completely.
  2. In a large mixing bowl, combine the cooked pasta with pepperoni, salami, and ham.
  3. Add in the shredded lettuce, red onions, banana peppers, black olives, tomatoes, and both cheeses.
  4. In a small bowl, whisk together the mayonnaise, red wine vinegar, olive oil, Italian seasoning, salt, and pepper.
  5. Pour the dressing over the pasta mixture and toss until well combined and evenly coated.
  6. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
  7. Serve cold, garnished with extra parmesan or fresh herbs if desired.
