A refreshing twist on a classic pasta salad featuring a variety of Italian meats, cheeses, and vegetables.
Ingredients

- 16 oz rotini pasta, cooked and cooled
- 1/2 cup sliced pepperoni
- 1/2 cup chopped salami
- 1/2 cup chopped ham
- 1 cup shredded iceberg lettuce
- 1/2 cup sliced red onions
- 1/2 cup sliced banana peppers
- 1/2 cup sliced black olives
- 1/2 cup chopped tomatoes
- 1/2 cup shredded provolone cheese
- 1/2 cup grated parmesan cheese
- 1/2 cup mayonnaise
- 2 tbsp red wine vinegar
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt & black pepper to taste
Instructions
- Cook rotini pasta according to package instructions. Drain and let cool completely.
- In a large mixing bowl, combine the cooked pasta with pepperoni, salami, and ham.
- Add in the shredded lettuce, red onions, banana peppers, black olives, tomatoes, and both cheeses.
- In a small bowl, whisk together the mayonnaise, red wine vinegar, olive oil, Italian seasoning, salt, and pepper.
- Pour the dressing over the pasta mixture and toss until well combined and evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
- Serve cold, garnished with extra parmesan or fresh herbs if desired.
Notes
- Chilling the salad allows flavors to blend better.
- Adjust the quantity of ingredients based on personal taste.
