Description

A hearty and healthy Italian Ground Turkey Soup packed with vegetables and flavor.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup fresh spinach
  • Grated Parmesan cheese for serving
  • Fresh basil leaves for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until the onion is translucent.
  2. Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  3. Stir in the diced carrots, celery, and zucchini, cooking for an additional 5 minutes until the vegetables begin to soften.
  4. Add the diced tomatoes (with their juice), chicken broth, dried oregano, dried basil, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes.
  5. In the last few minutes of cooking, stir in the fresh spinach until wilted.
  6. Serve hot, garnished with grated Parmesan cheese and fresh basil leaves.

  • Feel free to add other vegetables like bell peppers or green beans.
  • This soup can be stored in the refrigerator for up to 3 days.
