A hearty and healthy Italian Ground Turkey Soup packed with vegetables and flavor.

- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup fresh spinach
- Grated Parmesan cheese for serving
- Fresh basil leaves for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until the onion is translucent.
- Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the diced carrots, celery, and zucchini, cooking for an additional 5 minutes until the vegetables begin to soften.
- Add the diced tomatoes (with their juice), chicken broth, dried oregano, dried basil, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes.
- In the last few minutes of cooking, stir in the fresh spinach until wilted.
- Serve hot, garnished with grated Parmesan cheese and fresh basil leaves.
Notes
- Feel free to add other vegetables like bell peppers or green beans.
- This soup can be stored in the refrigerator for up to 3 days.
- For a spicier version, add red pepper flakes.
