Description
Italian Love Cake is a delicious layered dessert with chocolate cake, cream cheese filling, and vanilla pudding topping.

- 1 box chocolate cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 (8 oz) package cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup milk
- 1 (3.4 oz) package instant vanilla pudding mix
- 1 cup whipped topping
- Chocolate shavings or cocoa powder for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large mixing bowl, combine the chocolate cake mix, water, vegetable oil, and eggs. Mix until well combined and smooth.
- Pour half of the chocolate cake batter into the prepared baking pan and set aside.
- In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Spread the cream cheese mixture evenly over the chocolate batter in the pan.
- Pour the remaining chocolate cake batter on top of the cream cheese layer, spreading it gently to cover.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the vanilla pudding according to package instructions using the milk. Once thickened, fold in the whipped topping until well combined.
- Once the cake is done, allow it to cool completely in the pan. Once cooled, spread the vanilla pudding mixture evenly over the top of the cake.
- Garnish with chocolate shavings or a dusting of cocoa powder if desired. Chill in the refrigerator for at least 2 hours before serving.
Notes
- Make sure to let the cake cool completely before adding the pudding layer.
