Description

Italian Love Cake is a delicious layered dessert with chocolate cake, cream cheese filling, and vanilla pudding topping.


Ingredients

  • 1 box chocolate cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 1 cup whipped topping
  • Chocolate shavings or cocoa powder for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large mixing bowl, combine the chocolate cake mix, water, vegetable oil, and eggs. Mix until well combined and smooth.
  3. Pour half of the chocolate cake batter into the prepared baking pan and set aside.
  4. In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. Spread the cream cheese mixture evenly over the chocolate batter in the pan.
  6. Pour the remaining chocolate cake batter on top of the cream cheese layer, spreading it gently to cover.
  7. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, prepare the vanilla pudding according to package instructions using the milk. Once thickened, fold in the whipped topping until well combined.
  9. Once the cake is done, allow it to cool completely in the pan. Once cooled, spread the vanilla pudding mixture evenly over the top of the cake.
  10. Garnish with chocolate shavings or a dusting of cocoa powder if desired. Chill in the refrigerator for at least 2 hours before serving.
