- 0.5 cup acini di pepe
- 3 cups spinach (chopped)

Instructions
- In a large bowl, combine the egg, ground beef, ground pork, bread crumbs, parmesan, fresh parsley, minced garlic, oregano, salt, and black pepper. Mix gently until just combined and roll into 1-inch meatballs.
- Heat olive oil in a large pot over medium-high heat. Brown the meatballs on all sides for 3-4 minutes and then transfer to a plate.
- In the same pot, add the diced onion, carrots, and celery. Sauté for 10 minutes until the vegetables soften.
- Add freshly minced garlic, salt, and black pepper, and cook for an additional 1 minute.
- Pour in the chicken broth and return the browned meatballs to the pot. Simmer for about 10 minutes.
- Add acini di pepe pasta and cook for 10 minutes, stirring occasionally.
- Stir in the chopped spinach and cook until wilted, about 1-2 minutes. Adjust seasoning if needed.
- Ladle soup into bowls and serve with grated parmesan cheese on top.
