A delicious one-pan meal featuring Italian sausage and fresh vegetables baked to perfection.

- 1 pound Italian sausage (mild or spicy, your choice)
- 2 cups bell peppers, sliced (red, yellow, and green)
- 1 large onion, sliced
- 2 cups zucchini, sliced
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet over medium heat, cook the Italian sausage until browned and cooked through, breaking it apart with a spoon as it cooks. Drain excess fat if necessary.
- In a large mixing bowl, combine the sliced bell peppers, onion, zucchini, diced tomatoes (with their juice), olive oil, Italian seasoning, salt, and pepper. Toss to coat the vegetables evenly.
- Add the cooked sausage to the vegetable mixture and stir to combine.
- Transfer the mixture to a large baking dish, spreading it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
- Remove from the oven and sprinkle the shredded mozzarella cheese on top. Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil before serving.
