Description

A comforting Italian casserole filled with flavorful sausage and tender potatoes, perfect for a family meal.


Ingredients

  • 1 pound Italian sausage, casings removed
  • 4 medium potatoes, thinly sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon, about 5–7 minutes. Remove from heat and set aside.
  3. In a large mixing bowl, combine the sliced potatoes, onion, garlic, bell pepper, diced tomatoes (with juice), Italian seasoning, salt, and pepper. Stir well to combine.
  4. Grease a 9×13-inch baking dish. Layer half of the potato mixture on the bottom. Top with half of the cooked sausage, then sprinkle with half of the mozzarella cheese.
  5. Repeat the layers with the remaining potato mixture and sausage, and finish with the remaining mozzarella cheese on top.
  6. Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15–20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
  7. Garnish with fresh parsley before serving.

Notes

  • For a spicier version, use hot Italian sausage.
  • This casserole can be prepared a day in advance and stored in the refrigerator before baking.
