Description

A refreshing Italian pasta salad featuring cheese tortellini, salami, mozzarella, and a blend of fresh ingredients.


Ingredients

  • 12 ounces cheese tortellini
  • 6 ounces salami, diced
  • 8 ounces fresh mozzarella balls, halved
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons of apple cider vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Cook the tortellini according to package directions. Drain and rinse under cold water until cooled.
  2. In a large mixing bowl, combine tortellini, salami, mozzarella, cherry tomatoes, olives, red onion, and basil.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, Italian seasoning, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss gently to coat evenly.
  5. Cover and refrigerate for at least 30 minutes to let the flavors meld.
  6. Garnish with extra basil and serve chilled or at room temperature.

Notes

  • Feel free to add additional vegetables like bell peppers or cucumbers for extra crunch.
