Description

These jelly donuts are perfectly fluffy and filled with sweet raspberry or strawberry jam, making them a delightful treat for any occasion.


Ingredients

Scale
  • 1 cup warm milk (whole milk preferred, 90°F to 100°F)
  • 1 tablespoon instant yeast or active dry yeast
  • 3 tablespoons granulated sugar
  • 4 cups bread flour (spooned and leveled, all-purpose flour can be used instead)
  • 2 large eggs (room temperature)
  • 1 teaspoon salt
  • 8 tablespoons unsalted butter (room temperature)
  • Vegetable oil (enough to fry the donuts, 2 quarts is good)
  • 2 cups granulated sugar (for tossing the donuts in)
  • 1½ cups seedless raspberry jam or strawberry jam

Instructions

  1. In a large mixing bowl or the bowl of a stand mixer, whisk together the warm milk, yeast, and granulated sugar. Let sit for 5 minutes or until the mixture is foamy.
  2. Add the flour, eggs, and salt to the bowl and mix with the dough hook for one minute on low speed, until incorporated.
  3. Scrape down the sides and bottom of the bowl and continue mixing at medium speed for 2 minutes.
  4. Scrape down the sides and bottom again and begin adding butter one tablespoon at a time.
  5. Continue mixing with the dough hook for another 5 minutes until the dough looks smooth and elastic.
  6. Lightly grease a large bowl, transfer the dough to the bowl, cover with greased plastic wrap, and let rest until doubled in size (about 60 to 90 minutes).
  7. Line two large baking sheets with parchment paper and lightly grease the parchment.
  8. Punch the dough down, transfer to a floured surface, and cut the dough into 16 pieces.
  9. Roll each piece into a tight ball and transfer to the baking sheets, leaving space between them.
  10. Cover loosely with greased plastic wrap and let rest until puffed (about 30 minutes).
  11. In a heavy dutch oven or deep pot, heat the vegetable oil to 330°F to 350°F.
  12. Carefully place the donuts into the hot oil and fry for 2 minutes on each side until golden brown.
  13. Toss the fried donuts in granulated sugar and place on a wire rack.
  14. Transfer the jam to a piping bag and fill each donut through a hole made in the side.
  15. Enjoy the donuts while they’re still warm and fresh!
