Description
These jelly donuts are perfectly fluffy and filled with sweet raspberry or strawberry jam, making them a delightful treat for any occasion.
Ingredients

- 1 cup warm milk (whole milk preferred, 90°F to 100°F)
- 1 tablespoon instant yeast or active dry yeast
- 3 tablespoons granulated sugar
- 4 cups bread flour (spooned and leveled, all-purpose flour can be used instead)
- 2 large eggs (room temperature)
- 1 teaspoon salt
- 8 tablespoons unsalted butter (room temperature)
- Vegetable oil (enough to fry the donuts, 2 quarts is good)
- 2 cups granulated sugar (for tossing the donuts in)
- 1½ cups seedless raspberry jam or strawberry jam
Instructions
- In a large mixing bowl or the bowl of a stand mixer, whisk together the warm milk, yeast, and granulated sugar. Let sit for 5 minutes or until the mixture is foamy.
- Add the flour, eggs, and salt to the bowl and mix with the dough hook for one minute on low speed, until incorporated.
- Scrape down the sides and bottom of the bowl and continue mixing at medium speed for 2 minutes.
- Scrape down the sides and bottom again and begin adding butter one tablespoon at a time.
- Continue mixing with the dough hook for another 5 minutes until the dough looks smooth and elastic.
- Lightly grease a large bowl, transfer the dough to the bowl, cover with greased plastic wrap, and let rest until doubled in size (about 60 to 90 minutes).
- Line two large baking sheets with parchment paper and lightly grease the parchment.
- Punch the dough down, transfer to a floured surface, and cut the dough into 16 pieces.
- Roll each piece into a tight ball and transfer to the baking sheets, leaving space between them.
- Cover loosely with greased plastic wrap and let rest until puffed (about 30 minutes).
- In a heavy dutch oven or deep pot, heat the vegetable oil to 330°F to 350°F.
- Carefully place the donuts into the hot oil and fry for 2 minutes on each side until golden brown.
- Toss the fried donuts in granulated sugar and place on a wire rack.
- Transfer the jam to a piping bag and fill each donut through a hole made in the side.
- Enjoy the donuts while they’re still warm and fresh!
