Description

Ingredients

  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 and 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  6. Scoop tablespoon-sized portions and roll into balls.
  7. Place dough balls on baking sheet and flatten gently using a fork in a crisscross pattern.
  8. Bake for 10 to 12 minutes or until edges are lightly golden and centers are slightly soft.
  9. Let cookies rest on the pan for 5 minutes, then transfer to a wire rack to cool completely.
