Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 (3 oz) box Jello (any flavor – like cherry, blue raspberry, or watermelon)
  • Crushed Jolly Rancher candies (matching or contrasting the Jello flavor) for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract; beat until well combined.
  4. In a separate bowl, whisk together flour, baking powder, salt, and the dry Jello mix.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Scoop 1-tbsp-sized portions of dough and roll them into balls. Place them on the prepared baking sheets.
  7. Flatten slightly with your hand or the bottom of a glass.
  8. Sprinkle each cookie lightly with crushed Jolly Ranchers.
  9. Bake for 8–10 minutes, or until edges are just set (do not overbake – they should be soft).
  10. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
