- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 ¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 (3 oz) box Jello (any flavor – like cherry, blue raspberry, or watermelon)
- Crushed Jolly Rancher candies (matching or contrasting the Jello flavor) for topping
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the egg and vanilla extract; beat until well combined.
- In a separate bowl, whisk together flour, baking powder, salt, and the dry Jello mix.
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Scoop 1-tbsp-sized portions of dough and roll them into balls. Place them on the prepared baking sheets.
- Flatten slightly with your hand or the bottom of a glass.
- Sprinkle each cookie lightly with crushed Jolly Ranchers.
- Bake for 8–10 minutes, or until edges are just set (do not overbake – they should be soft).
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
