- 1 cup almond flour (100g)
- 1 cup powdered sugar (120g)
- 2 large egg whites (about 60g)
- 1/4 cup granulated sugar (50g)
- 3 tbsp key lime juice (45ml)
- 1/2 cup unsalted butter, softened (113g)
- Zest of 1 key lime
Instructions
- Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a clean bowl, whip egg whites until soft peaks form, then gradually add granulated sugar until stiff peaks form.
- Sift together almond flour and powdered sugar; gently fold into the whipped egg whites until well combined.
- Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheets.
- Let piped macarons rest for 30-60 minutes until they form a dry skin.
- Bake for 15-20 minutes; allow to cool completely before removing from sheets.
- For the filling, beat softened butter until creamy, then gradually mix in powdered sugar and key lime juice until fluffy.
- Pair macaron shells and fill one half with the key lime filling before sandwiching them together.
Notes
- Make sure your egg whites are at room temperature for better whipping.
- Humidity can affect the macaron shells; try to make them on a dry day.
- Use fresh key lime juice for the best flavor.
