- 1 pound ground beef
- 2 packs instant ramen noodles
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon grated ginger (optional)
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon gochujang (Korean chili paste)
- 1 teaspoon rice vinegar
- 2 green onions, chopped
- 1 tablespoon toasted sesame seeds
- Red pepper flakes (optional)
Instructions
- Bring a medium saucepan of water to a boil. Add ramen noodles and cook for 2–3 minutes until just tender. Drain and set aside.
- Heat a large skillet over medium-high heat. Add ground beef and cook until browned, about 5–7 minutes. Drain excess grease, leaving a small amount for flavor.
- Lower heat to medium. Add minced garlic and grated ginger. Cook for 1–2 minutes until fragrant.
- In a small bowl, whisk together soy sauce, brown sugar, gochujang, sesame oil, and rice vinegar. Pour sauce over beef and stir to coat. Let it simmer for 2–3 minutes.
- Add the cooked ramen noodles to the skillet. Toss everything together until well coated and heated through, about 1–2 minutes.
- Turn off heat. Garnish with green onions, sesame seeds, and red pepper flakes if desired. Serve hot.
Notes
- For extra sauce, double the soy sauce, brown sugar, and gochujang mix.
- Ground turkey or tofu can replace beef for a lighter or vegetarian option.
- Undercook noodles slightly—they’ll continue cooking when mixed with the beef and sauce.
