Ingredients

  • 1/2 head iceberg lettuce, finely chopped
  • 1/2 cup canned chickpeas (garbanzo beans), drained and rinsed

  • 1/2 cup diced part-skim mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1/2 cup finely chopped grilled turkey breast (as a pork-free protein)
  • 2 tablespoons red wine vinegar (or use white balsamic as alternative)
  • 1/3 cup extra-virgin olive oil
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste

Instructions

  1. In a small bowl or jar, whisk together vinegar, olive oil, Dijon mustard, oregano, salt, and pepper until emulsified. Set aside.
  2. In a large salad bowl, combine chopped romaine and iceberg lettuces.
