Description
Deliciously moist and buttery biscuits infused with fresh lemon and bursting with blueberries, perfect for breakfast or a sweet treat.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 1/2 cups buttermilk (cold)
- 1/2 cup unsalted butter (1 stick, melted)
- 1 tablespoon lemon zest
- 1 tablespoon fresh lemon juice
- 1 cup fresh or frozen blueberries
- 1/2 cup powdered sugar
- 1 tablespoon lemon juice (for glaze)
Instructions
- Preheat your oven to 450°F (232°C). Place the butter in an 8×8 inch baking dish and let it melt in the oven. Remove once fully melted.
- In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
- Add lemon zest and blueberries to the dry ingredients and gently toss to combine.
- Pour in the buttermilk and fresh lemon juice. Mix just until combined—do not overmix.
- Transfer the dough to the baking dish with melted butter. Gently spread it evenly to the edges.
- Score the top into 9 squares with a knife, not cutting all the way through.
- Bake for 25–28 minutes until golden brown and a toothpick inserted comes out clean.
- Let cool for 5–10 minutes before adding glaze.
- Make the glaze by whisking powdered sugar with lemon juice until smooth. Drizzle over the warm biscuits before serving.
Notes
- For a more intense lemon flavor, increase lemon zest and juice.
- These biscuits are best served warm.
- Can use a mix of fresh and frozen blueberries.
