Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs

  • 1/2 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • For the glaze: 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, using an electric mixer, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs, one at a time, mixing well after each addition. Then, mix in the lemon zest, lemon juice, and vanilla extract until fully combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, alternating with the buttermilk. Mix until just combined, ensuring not to overmix.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  8. While the cakes are cooling, prepare the glaze by whisking together powdered sugar, fresh lemon juice, and lemon zest until smooth.
  9. Once the cakes are completely cool, place one layer on a serving plate and drizzle a portion of the glaze over the top. Add the second layer and drizzle the remaining glaze over the top, allowing it to dribble down the sides for a beautiful finish.
