Description

A delicious Lemon Crumb Coffee Cake that combines the bright flavors of lemon with a buttery crumb topping, perfect for your morning coffee or as a delightful dessert.


Ingredients

  • ¾ cup all-purpose flour
  • 6 tablespoons brown sugar packed
  • 1 tablespoon lemon zest
  • ¼ teaspoon kosher salt
  • 6 tablespoons butter
  • ½ cup butter
  • ¾1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 4 tablespoons lemon zest
  • 4 tablespoons fresh lemon juice
  • 1 ½ cups all-purpose flour
  • ¼ teaspoon kosher salt
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ⅓ cup Greek yogurt

Instructions

  1. Remove eggs, Greek yogurt, and butter from the fridge before starting.
  2. In a medium bowl, mix together flour, brown sugar, and lemon zest for the crumb topping. Add cubes of butter and blend until combined, then refrigerate.
  3. Preheat the oven to 350°F (175°C). Butter or spray an 8×8 square baking pan.
  4. In a medium bowl, whisk together flour, baking soda, salt, and baking powder. Set aside.
  5. In a large mixing bowl, beat butter and sugar together for 2-3 minutes.
  6. Add eggs one at a time, beating for 30 seconds after each addition.
  7. Add vanilla extract, Greek yogurt, lemon zest, and lemon juice. Mix until combined.
  8. Add flour mixture gradually until just combined.
  9. Spread batter into the prepared baking dish.
  10. Remove crumb topping from the fridge and sprinkle over the batter.
  11. Bake for 35-45 minutes until a toothpick comes out clean.
  12. If desired, sprinkle with powdered sugar or glaze after cooling.

Notes

  • For gluten-free, use a gluten-free flour blend.
  • To make it keto, adjust sugar accordingly.
  • Reduce sugar for high altitude baking.
