Lemon Dill Baked Chicken is a zesty and flavorful dish that combines tender chicken thighs with a fresh lemon and dill marinade, baked to perfection.


Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • 2 tablespoons fresh dill, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • Lemon slices for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, chopped dill, minced garlic, salt, pepper, paprika, and onion powder until well combined.
  3. Place the chicken thighs in a large baking dish and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  4. Arrange the chicken thighs skin-side up in the baking dish and pour any remaining marinade over the top.
  5. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy and golden brown. The internal temperature should reach 165°F (75°C).
  6. Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with fresh lemon slices and additional dill if desired.
