Description

Lemon Sweet Rolls are delightful and easy-to-make pastries, perfect for a sweet treat or breakfast.

Ingredients

Scale
  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 packet active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1/4 cup heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted (for glaze)

Instructions

  1. In a large mixing bowl, combine 3 cups of all-purpose flour, 1/4 cup of granulated sugar, and 1 teaspoon of salt.
  2. Sprinkle 1 packet of active dry yeast over the dry ingredients and stir to combine.
  3. In a separate bowl, warm 1/2 cup of milk in the microwave or on the stove until it is just warm to the touch, not hot.
  4. Pour the warm milk into the dry ingredients mixture and stir to combine.
  5. Add 1/4 cup of melted unsalted butter, 2 large eggs, 1 tablespoon of lemon zest, and 1/4 cup of fresh lemon juice into the bowl.
  6. Stir the ingredients together until a dough begins to form.
  7. Knead the dough in the bowl or on a lightly floured surface for about 8-10 minutes until the dough becomes smooth and elastic.
  8. Once kneaded, cover the dough with a clean kitchen towel or plastic wrap and place it in a warm spot to rise for about 1 hour or until it doubles in size.
  9. After the dough has risen, punch it down to release any air bubbles.
  10. Lightly flour a clean surface and roll the dough out into a rectangle, about 12 inches by 18 inches in size.
  11. Spread 1/4 cup of melted unsalted butter over the dough, ensuring even coverage.
  12. Sprinkle sugar and cinnamon (if desired) over the buttered dough, and gently press it in with your hands.
  13. Roll the dough tightly into a log, starting from one long edge and rolling toward the other.
  14. Slice the rolled dough into 1-inch wide pieces and place them in a greased baking dish, ensuring they are close together.
  15. Cover the rolls with a kitchen towel and let them rise for another 30 minutes, until they puff up.
  16. While the rolls rise, preheat the oven to 350°F (175°C).
  17. Once the rolls have risen, place the baking dish in the oven and bake for 20-25 minutes, or until the rolls are golden brown on top.
  18. While the rolls bake, prepare the glaze by whisking together 1/4 cup of heavy cream, 1 cup of powdered sugar, and 1 teaspoon of vanilla extract in a small bowl.
  19. Once the rolls are done baking, remove them from the oven and let them cool for about 10 minutes.
  20. Drizzle the glaze over the warm rolls, making sure each one is generously coated.
  21. Melt 2 tablespoons of unsalted butter in a small bowl and drizzle it over the rolls for an extra rich finish.
  22. Serve the lemon sweet rolls warm and enjoy their tangy, sweet, and buttery flavor.

Notes

  • Ensure the milk is warm, not hot, to avoid killing the yeast.
  • Knead the dough until smooth and elastic for the best texture.
  • Let the dough rise in a warm place for optimal yeast activity.
  • Roll the dough tightly to ensure evenly shaped rolls.
  • For a richer flavor, add a pinch of cinnamon to the filling.
