Instructions
- In a large mixing bowl, combine 3 cups of all-purpose flour, 1/4 cup of granulated sugar, and 1 teaspoon of salt.
- Sprinkle 1 packet of active dry yeast over the dry ingredients and stir to combine.
- In a separate bowl, warm 1/2 cup of milk in the microwave or on the stove until it is just warm to the touch, not hot.
- Pour the warm milk into the dry ingredients mixture and stir to combine.
- Add 1/4 cup of melted unsalted butter, 2 large eggs, 1 tablespoon of lemon zest, and 1/4 cup of fresh lemon juice into the bowl.
- Stir the ingredients together until a dough begins to form.
- Knead the dough in the bowl or on a lightly floured surface for about 8-10 minutes until the dough becomes smooth and elastic.
- Once kneaded, cover the dough with a clean kitchen towel or plastic wrap and place it in a warm spot to rise for about 1 hour or until it doubles in size.
- After the dough has risen, punch it down to release any air bubbles.
- Lightly flour a clean surface and roll the dough out into a rectangle, about 12 inches by 18 inches in size.
- Spread 1/4 cup of melted unsalted butter over the dough, ensuring even coverage.
- Sprinkle sugar and cinnamon (if desired) over the buttered dough, and gently press it in with your hands.
- Roll the dough tightly into a log, starting from one long edge and rolling toward the other.
- Slice the rolled dough into 1-inch wide pieces and place them in a greased baking dish, ensuring they are close together.
