- 2 ½ cups crushed vanilla wafer cookies or graham crackers
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice

- Coconut flakes
Instructions
- Crush the Cookies: Place vanilla wafers or graham crackers in a food processor and pulse until finely ground. If you don’t have a food processor, add the cookies to a zip-top bag and crush them with a rolling pin.
- Mix the Dough: In a large bowl, combine the crushed cookies, sweetened condensed milk, lemon zest, and lemon juice. Stir until fully combined. The mixture should be thick but slightly sticky.
- Chill: Refrigerate the mixture for 30–45 minutes. This makes it easier to roll into balls.
- Shape the Truffles: Scoop about 1 tablespoon of the mixture and roll into balls using your hands. If the mixture is too sticky, lightly dust your hands with powdered sugar or cornstarch.
- Coat and Serve: Roll each ball in your desired coating—powdered sugar, more crushed cookies, or coconut flakes. Place on a parchment-lined tray and chill for an additional 15–30 minutes before serving.
