Description
A refreshing Lemony Chickpea Feta Salad perfect for any meal or as a light snack.
Ingredients

- 2 cans (15 ounces each) chickpeas, drained and rinsed
- 8 ounces feta cheese, diced or crumbled
- 1/2 cup finely diced red onion
- 1/3 cup chopped fresh parsley
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons freshly squeezed lemon juice
- 1/2 teaspoon finely grated lemon zest
- 1 tablespoon honey or pure maple syrup
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- In a large mixing bowl, whisk together olive oil, lemon juice, lemon zest, honey or maple syrup, kosher salt, and black pepper until fully emulsified.
- Add chickpeas, diced feta, red onion, and parsley to the bowl with the dressing. Gently toss ingredients until evenly coated.
- Taste and adjust seasoning with additional salt or pepper as desired. Serve immediately or refrigerate until ready to use.
Notes
- Can be made a day in advance for flavors to meld.
- Adjust the level of lemon juice and honey to suit your taste.
- Great served on its own or as a side dish.
