Description

A refreshing Lemony Chickpea Feta Salad perfect for any meal or as a light snack.


Ingredients

Scale
  • 2 cans (15 ounces each) chickpeas, drained and rinsed
  • 8 ounces feta cheese, diced or crumbled
  • 1/2 cup finely diced red onion
  • 1/3 cup chopped fresh parsley
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon finely grated lemon zest
  • 1 tablespoon honey or pure maple syrup
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. In a large mixing bowl, whisk together olive oil, lemon juice, lemon zest, honey or maple syrup, kosher salt, and black pepper until fully emulsified.
  2. Add chickpeas, diced feta, red onion, and parsley to the bowl with the dressing. Gently toss ingredients until evenly coated.
  3. Taste and adjust seasoning with additional salt or pepper as desired. Serve immediately or refrigerate until ready to use.

Notes

  • Can be made a day in advance for flavors to meld.
  • Adjust the level of lemon juice and honey to suit your taste.
