- 4 large russet potatoes
- 1 lb steak (ribeye, sirloin, or your favorite cut)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 slices crispy bacon, chopped
- 1/4 cup chopped green onions
- 2 tablespoons butter
- Optional: hot sauce or steak sauce for serving
Instructions
- Preheat oven to 425°F (220°C). Scrub potatoes clean, prick them several times with a fork, and rub with olive oil and salt.
- Place potatoes directly on oven rack and bake for 45–60 minutes, until tender when pierced with a fork.
- While potatoes bake, season steak generously with salt and pepper. Heat a skillet or grill pan over medium-high heat and cook steak to desired doneness (about 4–5 minutes per side for medium-rare). Rest steak for 5 minutes, then slice thinly.
- Once potatoes are done, slice them open lengthwise and fluff the insides with a fork. Add butter and salt to taste.
- Top each baked potato with sliced steak, shredded cheddar, sour cream, bacon bits, and green onions.
- Serve immediately with optional hot sauce or steak sauce on the side.
Notes
- For fluffier potatoes, consider baking them on a rack instead of directly on the oven rack.
