- 4 large russet potatoes
- 1 cup sharp cheddar cheese, shredded
- 1 cup cooked bacon bits
- ½ cup sour cream (or Greek yogurt)
- ¼ cup chives or green onions, finely chopped
- 4 tbsp unsalted butter
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the russet potatoes thoroughly; dry them completely.
- Prick each potato several times with a fork.
- Place potatoes directly on the oven rack or a baking sheet; bake for 45-60 minutes until tender.
- Remove from oven, let cool slightly, then slice open lengthwise.
- Add butter inside each potato and let it melt before layering on cheese, bacon bits, and sour cream.
- Top with chives or green onions before serving.

- For a healthier option, substitute sour cream with Greek yogurt.
- Ensure the potatoes are completely dry before baking for a crispier skin.
