Description

Mango Oatmeal Crumble Bars are a delightful treat featuring a buttery oat crust topped with a sweet, juicy mango layer and a crunchy crumble topping.


Ingredients

  • ½ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • ¾ cup old-fashioned whole-rolled oats
  • ½ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • ½ teaspoon salt, or to taste
  • 2 cups coarsely chopped fresh ripe mango
  • ⅓ cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons corn starch

Instructions

  1. Preheat oven to 350F. Line an 8-inch square pan with aluminum foil and spray with cooking spray; set aside.
  2. In a large, microwave-safe bowl melt the butter, about 1 minute on high power.
  3. Add the flour, oats, sugars, optional salt, and stir to combine. Mixture will be dry and sandy.
  4. Set 1 heaping cup mixture aside for topping.
  5. Transfer remaining mixture to prepared pan and hard-pack to create an even, smooth crust; set aside.
  6. In a large mixing bowl, add mango, sugar, lemon juice, and corn starch. Toss to combine.
  7. Evenly distribute mango mixture over the crust.
  8. Sprinkle the reserved heaping 1 cup of crumble topping mixture over the mango layer.
  9. Bake for about 50 minutes, until edges are set and center has just set.
  10. Allow bars to cool for at least 1 hour before slicing and serving.

Notes

  • If sugar hasn’t dissolved fully, it’s okay as it will liquify while baking.
  • Watch for color and bubbling to determine doneness, rather than time.
  • Store airtight at room temperature for up to 1 week, in the fridge for up to 10 days, or in the freezer for up to 6 months.
