- 1 cup small tapioca pearls
- 4 cups water
- 1 can (400 ml) coconut milk
- 1 cup fresh ripe mango, diced
- 1/4 cup sugar (or to taste)
- 1/2 teaspoon vanilla extract
- A pinch of salt
- Fresh mint leaves for garnish
Instructions
- In a medium saucepan, bring 4 cups of water to a boil. Once boiling, add the small tapioca pearls.
- Reduce the heat to low and let the pearls simmer for about 15-20 minutes, stirring occasionally, until they become translucent and tender.
- Once cooked, remove the saucepan from heat and strain the tapioca pearls. Rinse them under cold water for a few seconds to halt the cooking process and set aside.
- In a separate saucepan, combine the coconut milk, sugar, vanilla extract, and a pinch of salt. Heat over medium heat, stirring occasionally until the sugar dissolves completely.
- Add the strained tapioca pearls to the coconut milk mixture and cook on low heat for an additional 5 minutes, allowing the flavors to meld.
- Remove from heat and let it cool slightly. To serve, ladle the tapioca mixture into serving bowls and top with the diced mango.
- Garnish with fresh mint leaves for a refreshing touch before serving.
