McGriddle Bites are a mini breakfast delight that combines the flavors of pancakes, sausage, and maple syrup in a bite-sized form.

- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 3/4 cup buttermilk
- 2 tablespoons melted butter
- 1/2 cup cooked breakfast sausage or bacon, finely chopped (or substitute turkey sausage)
- 1/2 cup shredded cheddar cheese
- 1/4 cup maple syrup (plus more for dipping)
- Nonstick spray or additional butter for greasing the pan
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a mini muffin pan with nonstick spray or melted butter.
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the egg, buttermilk, and melted butter. Stir in the maple syrup.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the cooked sausage (or bacon) and shredded cheddar cheese.
- Scoop the batter into the prepared mini muffin pan, filling each cup about 3/4 full.
- Bake for 12–15 minutes, or until the bites are golden and a toothpick inserted into the center comes out clean.
- Let cool slightly before serving. Serve with extra maple syrup for dipping.
Notes
- These bites can be made ahead of time and reheated for a quick breakfast.
- Feel free to customize the filling with your favorite breakfast meats or cheeses.
- For a healthier option, consider using turkey sausage or reducing the amount of cheese.
