Description

McGriddle Bites are a mini breakfast delight that combines the flavors of pancakes, sausage, and maple syrup in a bite-sized form.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 3/4 cup buttermilk
  • 2 tablespoons melted butter
  • 1/2 cup cooked breakfast sausage or bacon, finely chopped (or substitute turkey sausage)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup maple syrup (plus more for dipping)
  • Nonstick spray or additional butter for greasing the pan

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a mini muffin pan with nonstick spray or melted butter.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the egg, buttermilk, and melted butter. Stir in the maple syrup.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the cooked sausage (or bacon) and shredded cheddar cheese.
  5. Scoop the batter into the prepared mini muffin pan, filling each cup about 3/4 full.
  6. Bake for 12–15 minutes, or until the bites are golden and a toothpick inserted into the center comes out clean.
  7. Let cool slightly before serving. Serve with extra maple syrup for dipping.
