Description

Meatloaf Potato Cupcakes are a creative and delicious take on traditional meatloaf, served in cupcake form and topped with fluffy mashed potatoes.


Ingredients

  • 1 pound ground beef or beef-pork combo
  • 1 teaspoon dried thyme or Italian herbs
  • 1 clove garlic, finely minced
  • Salt and pepper to your liking
  • 1/2 cup breadcrumbs
  • 1 small onion, diced finely
  • 1 large egg
  • 2 tablespoons ketchup
  • 1/4 cup milk
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons softened butter
  • 2 cups mashed potatoes, homemade or store-bought
  • Salt and pepper for seasoning
  • 1/4 cup cream or milk
  • Fresh parsley or chives, chopped for garnish
  • Cherry tomatoes, chopped for topping
  • 12 to 16 silicone or metal liners for muffin pan

Instructions

  1. Heat oven to 375°F (190°C). Prepare muffin pan by adding liners or greasing it if you don’t have any.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, garlic, chopped onion, egg, ketchup, Worcestershire sauce, thyme, salt, and pepper. Stir gently until mixed to keep it tender.
  3. Scoop meat mixture into muffin cups evenly. Press down firmly and create a little dip in the center of each.
  4. Bake for about 20 to 25 minutes until done and the internal temperature reaches 160°F (71°C). Allow them to cool slightly when removed from the oven.
  5. In a separate bowl, beat mashed potatoes, softened butter, and cream with a hand mixer until fluffy and light. Add salt and pepper to taste.
  6. Spoon or pipe the creamy potato mixture on top of each meat cupcake. Garnish with chopped cherry tomato bits and sprinkle fresh parsley or chives on top.
  7. Serve warm as a main dish or snack. Optionally, pour gravy over for extra flavor.

  • For extra flavor, consider adding cheese to the potato topping.
