Ingredients

  • 8 ounces goat cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh oregano, chopped (or 1 tablespoon dried oregano)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Crusty bread or pita for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium baking dish, place the goat cheese in the center. Surround it with the cherry tomatoes, Kalamata olives, and sun-dried tomatoes.
  3. In a small bowl, mix the minced garlic, fresh oregano, olive oil, salt, and pepper. Drizzle this mixture over the goat cheese and vegetables.
  4. Bake in the preheated oven for 20-25 minutes, or until the goat cheese is soft and slightly golden on top.
  5. Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
  6. Serve warm with crusty bread or pita for dipping.

Notes

  • For a spicier version, add some red pepper flakes to the garlic mixture.
