Ingredients

- 75 grams crumbled feta (about 1/2 cup)
- 110 grams shredded mozzarella (around 1 cup)
- 1 medium diced tomato (grape, cherry, or plum work well)
- 33 grams diced red onion (roughly 1/3 cup)
- 30 grams chopped fresh spinach (close to 1 cup)
- 3 large flour tortillas (burrito style, roughly 25 cm each)
Instructions
- In a bowl, mix together the diced tomato, red onion, chopped spinach, crumbled feta, and shredded mozzarella. Stir gently until everything’s well blended.
- Heat a bit of oil in a large flat pan or griddle over medium heat.
- Scoop one third of the filling onto one half of each tortilla. Fold the other half over to completely cover the filling.
- Put the folded tortillas in the pan and cook each side for 3 to 4 minutes.
- Press down lightly with a spatula until they’re golden and the cheese melts.
- Take the quesadillas out of the pan and cut each one into 4 wedges. Enjoy right away, adding toppings like sour cream, salsa, or pico de gallo if you want.
